Just like the one last year, only aiming for 50 instead of 100. First reads only, public, recommendations welcomed, etc. However! To make it more interesting, I'll put in a few sentences about each book and how I felt about it. ^_^

I'm storing this recipe (with picture!) here so that next time I'm in the good old US of A I can make it. And I'm counting on certain kitchens to help in this project. Probably Rae's. XD

~~~~~~~~~SWEET POTATO CHEESECAKE~~~~~

Cream Cheese Layer
1 package (8 oz) cream cheese, not softened
1/4 cup granulated sugar
1 egg
1 teaspoon grated orange peel

Sweet Potato Layer
1 cup mashed cooked dark orange sweet potatoes (about 3/4 lb uncooked)
2/3 cup half-and-half
1/2 cup packed brown sugar
1 teaspoon grated orange peel
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/8 teaspoon salt
1 egg

Crust
1 Pillsbury® Pet-Ritz® frozen deep dish pie crust

Topping
1 cup sweetened whipped cream

DIRECTIONS

1. Place cookie sheet on oven rack. Heat oven to 350°F. In small bowl, beat cream cheese and sugar on low speed until well blended. Add egg; beat well. Stir in orange peel. Set aside.

2. Place sweet potatoes in food processor; cover and process until smooth. In large bowl, beat sweet potato layer ingredients with wire whisk. Spread cream cheese mixture in frozen pie crust. Carefully spoon sweet potato mixture over cream cheese mixture.

3 Bake on cookie sheet 50 to 60 minutes or until set and knife inserted near center comes out clean. Cool 30 minutes. Refrigerate until chilled, 3 to 4 hours. 4 Serve pie with sweetened whipped cream. Store covered in refrigerator.

My first thought was "PFFFT this will be easy"...and then I saw the third rule. >.>

I don't even know of 100 books that I haven't read that I want to read (think 3-4 books a week for the last decade, and you will have some idea of how much I've read. I had no social life, living on island with no friends anywhere nearby and all XD), especially as I have devoured pretty much everything Terry Pratchett ever wrote, all in the last six months. I even read 5 new books last week (Artemis Fowl, Artemis Fowl Eternity Code, Truckers, Diggers, Wings), but last week was 2009 and I refuse to cheat. XD

Rules and Guidelines:
1. Read 100 books or more in 2010.
2. Keep track of how many I read.
3. First time reads only.

I'm going to type up a whole bunch of recipes to give to [livejournal.com profile] simkittensims and [livejournal.com profile] brilliantcat, and, as [livejournal.com profile] simkittensims' mom made me crave these ones, this recipe is first. XD

Oven Temp: 375F / 190C

Ingredients:

1 cup butter
1/2 cup sugar
1 egg yolk
1 tsp vanilla
1/2 tsp lemon peel
2 1/2 cups flour
1/4 tsp salt
Jam - use favorite flavor or strawberry

Make dough in usual fashion by creaming butter and sugar, then adding egg yolk, vanilla, and lemon peel. Add salt and then flour. Shape dough into logs approximately 3/4inch wide by 15 inches long (sorry metric people, you'll have to do your own calculations. I can work with both sets of numbers, but not when I'm baking). Place 2 inches apart on ungreased baking sheets. Use finger to make a lengthwise groove down center. DO NOT press finger all the way through. Bake 10 minutes. Remove from oven. Spoon jam into groove. Return to oven and bake until firm, 5 to 10 more minutes. When cool, cut diagonally into 1 inch pieces.

Makes about 4 dozen cookies.

Optional:
When still hot, drizzle with mixture of 1/2 cup powdered/icing sugar and 1 tbsp water.

(personally I think this makes them too sweet, but it does give them a more sophisticated air if you drizzle nice lines)

Moar recipe storage!

Sandy gave me this a while ago, and I was afraid I'd lost it. Photocopies run away from me. >.>

Ingredients:
100g butter, melted
250 malt biscuits, crushed (I just used plain vanilla dry ones lol)
2 cups walnut pieces, roughly chopped and lightly toasted
1.5 cups dark chocolate pieces, chopped
1 cup sultanas/raisins
3 cups long-thread coconut
500g sweetened condensed milk

Preheat oven to 160C. Lightly grease a 23cm x 33cm slice pan, line with baking paper.

Combine butter and biscuit crumbs and press into pan. Mix together remaining ingredients and roughly press over the base.

Bake for 30 minutes or until browned. Do not overcook. Cut into smallish pieces when cooled.

Nom!

Notes: This is WAY better when cold. My family tried it fresh out of the oven and went ICK. But then they tried it again the next morning...and when I came back from work, it was gone. >.>

When I was visiting my aunt, I picked up the pattern and fabrics for the CUTEST baby quilt, featuring fabric with rubber duckies in puddles with UMBRELLAS. These pics show what I did yesterday and today. No, I did not spend two solid days working on this. Just most of two days. XD Until the power goes off (which has happened twice today GRRR) or until it get darkish, as I STILL haven't replaced all my light bulbs. XD
